Banana Snack Cake

Ingredients:

1 2/3 cup all purpose flour
1 teaspoon baking soda
1 cup packed brown sugar
1/2 cup water
1/3 cup mashed ripe banana (about 1 small)
1/3 cup vegetable oil
1/2 teaspoon vanilla extract

Directions:

In a large bowl, combine flour and baking soda. In another bowl, whisk the brown sugar, water, banana, oil, and vanilla. Stir into dry ingredients just until moistened. Transfer to a greased 8-inch square baking dish. Bake at 350 degrees for 30-35 minutes or until a toothpick inserted in the center comes out clean. Cool on a wire rack. Dust with confectioner's sugar. Cut into squares.
