Barley Zucchini Bread

Ingredients:

3 cups barley flour
½ teaspoon baking powder
1 teaspoon salt
2 teaspoons cinnamon
1 teaspoon baking soda
2 cups peeled, grated zucchini (about 3 medium)
4 ½ tablespoons water, 4 ½ tablespoons oil, 1 tablespoon baking powder; mixed together
1 cup oil
1 tablespoon vanilla extract
2 cups sugar

Directions:

Preheat oven to 350 degrees. Sift together flour, baking powder, salt, cinnamon, and baking soda. Add zucchini, water, oil, and baking powder mixture, oil, vanilla extract and sugar. Mix well. Pour into three loaf pans. Bake 65 minutes or until a cake tester inserted into center comes out clean. Makes 3 loaves.
