Butter Cookies

Ingredients:

1 cup butter, softened
1 cup sugar
1 egg replacer
2 1/2 cups oat flour
2 tablespoons orange juice
1 tablespoon vanilla
1 teaspoon baking powder

Directions:

Combine butter, sugar and egg replacer in bowl, beat at medium speed until creamy. Add flour, orange juice, vanilla and baking powder. beat until well mixed. Divide dough into thirds, wrap in plastic food wrap. Refrigerate until firm (2-3 hours).

Heat oven to 400. On lower rack place an empty cookie sheet. Roll into little balls. Place cookie sheet with cookies on top rack and cook for approximately 10 minutes. Let cool about 5 minutes in pan before moving to rack.
