Cinnamon Pancake Mix

Milk-free Egg-free Wheat-free Peanut-free
Soy-free Nut-free  Other 

Ingredients:

3 cups all-purpose flour and/or whole wheat flour
3 tablespoons sugar
2 tablespoons baking powder
4 1/2 teaspoons cinnamon
1 1/4 teaspoon salt

Directions:

Combine all ingredients and store in refrigerator or freezer.

To use, add:
1 cup water
1 egg
2 tablespoons vegetable oil
1 1/3 cup cinnamon pancake mix
Optional: blueberries, chopped pecans, diced bananas, diced apples

In medium bowl, combine water, egg, and oil. With fork, blend in mix until moistened but still lumpy. Batter is thick, but more liquid can be added if it looks too thick. Fold in any optional ingredients. Makes about 8 pancakes. The mix makes about 3 batches of pancakes.
