Potato Salad

Ingredients:

6 - 8 large potatoes
1/2 small white onion or 2-3 green onions
1 tablespoon parsley
crumbled bacon (optional)

Dressing Ingredients:

1/4 cup white vinegar
1/8 cup olive oil
2 teaspoons sugar
1 teaspoon salt
1/4 teaspoon black pepper
1/4 cup of mayonnaise substitute (i.e. Veganaise)

Directions:

Boil potatoes. When cooked, slice potatoes into a large bowl. Toss with the onions, parsley and bacon.

Mix the dressing ingredients, except for the mayonnaise substitute, in a small bowl. Pour over potatoes and allow to marinate 1 hour at room temperature. Don't toss.

After 1 hour, add 1/4 cup of mayonnaise substitute and toss lightly. Refrigerate.
