Wheat-free Thanksgiving Sweet Bread

Ingredients:

3/4 cup oat flour
1 1/4 cups white rice flour
1 tablespoon xanthan gum
1 teaspoon baking soda
1 teaspoon  ground cinnamon
1/2 teaspoon baking powder
1 cup applesauce
3/4 cup sugar
1/2 cup milk-free, soy-free margarine, melted
3 tablespoons water, 3 tablespoons oil, 2 teaspoons baking powder; mixed together
1/2 cup raisins

Directions:

Preheat oven to 350 degrees. Grease 9 x 5 inch pan. Set aside. In a large bowl, combine flours, xanthan gum, baking soda, cinnamon, and baking powder. Set aside. In a medium bowl, combine applesauce; sugar; margarine; and water, oil, and baking powder mixture. Stir into flour mixture, mixing well. Stir in raisins. Pour into prepared pan. Bake 40 to 45 minutes, or until toothpick inserted in center comes out clean. Cool in pan 20 minutes. Transfer to cool, flat surface to cool completely. Spoon Cinnamon Drizzle over top of loaf. Using toothpick, poke a few small holes in top of loaf to allow Cinnamon Drizzle to seep into bread.
